Homemade Ice Cream with Strawberries and Mint

This is by far one of my favorite food seasons in the year. Summer brings all kinds of fresh vegetables and berries…a luxury that Midwesterners cherish for a mere 3-4 months of the year. I’m always depressed during the winter when the vegetable and fruit selection is meager. When summer rolls around, I make sure I savor and admire every vegetable and fruit in my possession. This next treat is a shout out to the  berries that are in season in Wisconsin. Nothing says summer like homemade ice cream with fresh berries and mint.

Homemade Vanilla Ice Cream

1 1/2  cups milk
1 1/8 cups sugar
3 cups heavy cream
1 1/2 tbsp. vanilla extract

In a medium mixing bowl, use a hand mixer on low speed to combine the milk and granulated sugar until the sugar is dissolved, about 1 to 2 minutes. Stir in the heavy cream and vanilla. Turn the machine on; pour the mixture into freezer bowl, and let mix until thickened, about 20 to 25 minutes. The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer ice cream to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before freezing.
